As this crazy year finally draws to a close, we look ahead to a brighter future and turn to our interns. This season, we’ve been pleased to work with Robert Feffer, Wenkai Wang, and Sydney Wolfe, three recent college graduates who have been a continual source of fresh perspectives and embody the “difference” we’d like to see in the arts and in the world. Although Robert and Wenkai are leaving after three months of working with us and Sydney is saying goodbye in a few weeks, they will always be part of the Target Margin family. Sydney shares her grandmother’s recipe for Pumpkin Bread, great with coffee for a sweet breakfast or afternoon snack.
Grandma Rosanne’s Pumpkin Bread
Ingredients:
· 3 ½ cups sifted flour
· 3 cups sugar
· 2 teaspoons baking soda
· 1 teaspoon cinnamon
· 1 ½ teaspoons salt
· 1 teaspoon nutmeg
· 4 eggs
· 1 cup vegetable oil
· ¾ cup water
· 2 cups pureed pumpkin
· 1 cup nuts (optional)
· 1 cup chocolate chips (optional)
Directions:
1. Preheat oven to 350 degrees Fahrenheit and grease & flour 3 loaf pans.
2. Sift all dry ingredients into a large bowl.
3. Make a well in the center and add all remaining ingredients at once except the nuts and/or chocolate chips. Mix until smooth, then add the nuts and/or chocolate chips.
4. Fill loaf tins half full with batter, then bake at 350 for 1 hour or until done.
5. Enjoy! (Makes 3 loaves)
